Blueberry Muffins

INGREDIENTS

1/3 cup uncooked regular oats
1 cup milk; divided to two 1/2 cups
1 c. fresh or well drained canned or frozen blueberries
2 cups all-purpose flour, divided
1/4 cup shortening
1/3 cup sugar
2 eggs, beaten
4 teaspoon baking powder
3/4 teaspoon salt

INSTRUCTIONS

Soak oats in 1/2 cup milk for a few minutes. Dust berries with 1/3 cup flour; set aside. Cream shortening & sugar until light & fluffy; add eggs & beat well. Combine remaining flour, baking powder & salt. Add to creamed mixture alternately with remaining milk; beating well after each addition. Add oats, blending well, stir in blueberries.
Spoon into well greased muffin pans & bake at 400 degrees for 30 minutes. Yield 1 dozen large muffins.
