Cranberry Bread

INGREDIENTS

1 egg
1 cup sugar
2 cups all-purpose flour
2 Tbsp. melted shortening
1 cup chopped pecans
1 cup sliced raw cranberries
1 medium orange
Boiling water as needed
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. baking powder

INSTRUCTIONS

Grate orange rind and squeeze juice in a cup. Add grated rind, pulp,juice,melted shortening and enough boiling water to make 3/4 cup. Add beaten egg when cool enough. Sift together flour, sugar, salt, baking soda, and baking powder. Add orange juice mixture to sifted dry ingredients. Fold in pecans and cranberries. Bake at 350 degree until done.
