INGREDIENTS
1 1/2 cups self-rising flour, sifted
3 eggs, yolks and whites separated
1 1/4 cup milk
6 tbsp. vegetable oil
INSTRUCTIONS
Turn waffle iron on to heat. Mix flour, egg yolk and milk as needed. Make batter thicker than pancake mixture. Then add shortening. Mix egg white until fluffy and stiff. Fold whites into mixture. Use shortening on grill after it gets hot on top and bottom.
Pour mixture onto griddle. Done when steam stops coming out of side and light goes off.
