INGREDIENTS
3 c sweet potatoes, mashed -- cooked
1 c sugar -- as needed
1/2 c butter
1 tsp vanilla
2 ea eggs -- beaten
1/3 c milk -- as needed
1 c brown sugar
1/3 c butter
1 c pecans -- chopped
1/2 c flour
INSTRUCTIONS
Cook and mash sweet potatoes. Stir in 1/2 cup butter, vanilla, eggs and sugar as needed. Stir in milk if needed. Do not add milk if too soupy. Place in casserole dish.
Topping:
Mix brown sugar,1 cup butter, pecans, and flour and spread over potatoes.
Bake 25 minutes at 350 degrees.
