Ham and Cheese Omelet

INGREDIENTS

2 Eggs, whole
shortening, melted or salad oil
1 slice cheese, break into pieces
1 slice cooked ham, chopped

INSTRUCTIONS

Place 2 shelled eggs in a small bowl and beat just enough to blend yolks and whites. Pour mixture on greased pan or griddle. Sprinkle 1 slice crumbled cheese (or 2 tbsp. shredded cheese) and 1 slice of chopped ham (or 1 tbsp. chopped ham) over eggs when partially set. Fold omelet in half or into thirds making a long oval shaped omelet. Serve immediately.
