INGREDIENTS
2 Eggs, whole
shortening, melted or salad oil
1 tbsp. cooked ham, chopped
1 tbsp. onions, chopped
1 tbsp. green peppers, chopped
INSTRUCTIONS
In a saucepan combine onions and peppers and saute in butter or margarine. Set aside.
Place 2 shelled eggs in a small bowl and beat just enough to blend yolks and whites. Pour mixture on greased pan or griddle. Sprinkle 1 slice of chopped ham (or 1 tbsp. chopped ham), onions and peppers over eggs when partially set. Fold omelet in half or into thirds making a long oval shaped omelet. Serve immediately.
