INGREDIENTS
1 qt. bread, dry, broken
water, variable
1/2 cup onions, dry, finely chopped
1/4 cup green peppers, fresh, finely chopped
1/3 cup celery, fresh, finely chopped
2 tbsp. shortening, melted
3 3/4 lb. ground beef, boneless
2 eggs, whole, beaten
1 tbsp. salt
3/4 tsp. black pepper
2 tsp. Worcestershire sauce
INSTRUCTIONS
Moisten bread with water; press out and discard excess water. Set aside.
Saute onions, peppers, celery in shortening until lightly browned.
Combine moistened bread, sauteed vegetables, beef, eggs, and seasonings. Mix lightly but thoroughly. Avoid over mixing if using mixer. Shape into 1 big loaf and place in oven for about 1 hour. Remove excess fat and liquid during cooking period. Cool slightly. Cut 13 slices per loaf.
