Beef Pot Pie

INGREDIENTS

2 lbs. beef, boneless, chuck, lean, 1-inch cubes
2 tbsp. margarine
5 medium onion, chopped
3 cups water
1 1/4 tsp. salt
1/8 tsp. black pepper
1/2 tsp. garlic powder
1 1/2 cups carrots, sliced
1 cup potatoes, fresh, cubed 1/2 inch pieces
1 pkg. (10 oz.) green peas, frozen, thawed
1 can (10 3/4 oz.) beef boullion
1 1/2 cups water, cold

PASTRY TOPPING:
1 cup flour
1/2 tsp. salt
1/2 cup shortening
2 tbsp. water

OPTIONAL CRUST:
6 cups flour
1 tbsp. baking flour
1 tbsp. salt
4 eggs
1 cup Crisco, melted
1/4 lb. butter or margarine, softened
4 to 6 tbsp. water, cold

INSTRUCTIONS

Brown beef in 2 tablespoons of margarine thoroughly. Remove meat and saute 1 medium chopped onion until tender. Return meat to the pot with onions and add 3 cups water. Stir in salt, pepper and garlic powder. Bring to a boil. Reduce to a simmer and cook for 45 minutes. Add carrots, potatoes and 4 medium chopped onions. Bring to a boil. Reduce heat, cover and simmer for 20 to 25 minutes, until vegetables are tender. Stir in peas and simmer 5 minutes. Pour in 1 can beef boullion. Blend 1/4 cup flour and 1 1/2 cup cold water together until smooth.; mix into beef and vegetable mixture and cook until thickened. Remove and pour mixture into a 2-quart casserole dish.


PASTRY TOPPING:
Combine flour and salt in a mixing bowl; cut in shortening. Sprinkle 2 tablespoons water over mixture. Mix with a fork. Roll out onto a floured pastry board enough to cover your baking dish.


Top with pastry; cut slits in pastry to allow steam to escape. Bake at 400 degrees F. for 40 minutes or until crust is golden brown.

OPTIONAL CRUST:
Sift dry ingredients together in a large bowl. In the middle of the flour drop the eggs, shortening, butter and water. Knead together making a smooth soft dough. Let dough stand for 2 hours in a cool place. Knead again and roll out. Add a little more butter if dough is to stiff. Line baking dish and add chicken mixture. Cover with top crust and brush with melted butter. Bake 1 hour at 250 degrees F.
