Chicken Fajitas

INGREDIENTS

1 pkg Boneless Chicken, cubed
2 lg Onions, cut into strips
2 lg Bell Peppers, cut into strips
seasoning salt, to taste
black pepper, to taste
salt, to taste
3 tbs sugar
2 tbs soy sauce
1/4 cup ketchup
1 pkg fajitas mix, add the required water from pkg.
fajitas shells from the dairy section
cooking oil
Cheddar Cheese, shredded
1 lg tomato, diced (Optional)

INSTRUCTIONS

Pre-heat in a large skillet on high, 2 tablespoons of cooking oil. Add onion strips and bell pepper strips to the oil and cook until almost tender; stir constantly. Do not burn the onions. Sprinkle some salt on the vegetables while cooking. Then drain the oil from the vegetables and set aside for later.

Sprinkle seasoning salt and pepper to taste on chicken before browning. Brown 1 package of boneless cubed chicken on high heat in 2 tablespoons of oil until done. After chicken is done, drain the oil and combine the cooked onions, peppers and chicken together.

Combine and mix, 1 pkg fajitas mix with the required amount of water from the package instructions. Pour and stir the mixture into the chicken, onions and peppers. Add 3 tablespoons of sugar, 2 tablespoons of soy sauce, and 1/4 cup of ketchup. Stir and mix together on high for about 5 minutes.

In a separate skillet, heat on both sides the fajitas shells. Do not overheat shells.

Place chicken mixture on a heated fajitas shell, sprinkle some shredded cheddar cheese on top.

Optional: A tomato; diced cooked in tablespoon of oil and drained may be added on top of the fajitas.
