INGREDIENTS
2 cups sifted flour
3/4 cup milk
3 tsp. baking powder
1/2 tsp. salt
1 tbsp. shortening
2 cans chicken broth
1 bag frozen mixed vegetables
salt, to taste
black pepper, to taste
2 to 3 large chicken breast, cooked, boned and diced
INSTRUCTIONS
In a large bowl sift 2 cups flour, 3 tsp. baking powder and 1/2 tsp salt; cut in 1 tbsp. shortening and add 3/4 cup milk to make dumpling mixture. Set aside.
Place 1 bag frozen vegetables in a large pot and cook according to directions on the bag. When vegetables are tender. Add 2 cans of chicken stock to vegetables and liquid. Add diced chicken and any broth left over from the cooked chicken. Add salt and black pepper to taste.
Drop by the spoonfuls the dumpling mixture into the boiling broth mixture. Turn heat down to a simmer, then cover and let cook for 10 minutes.
