Chicken Loaf

INGREDIENTS

5 T. butter
1 c. chicken broth
1/2 c. milk
1/2 c. flour
1 T. chopped onion
2 T. chopped green pepper
3 c. soft breadcrumbs
4 c. chopped cooked chicken

INSTRUCTIONS

Melt 4 tablespoons butter in saucepan, add 1/2 cup flour and stir until smooth. Gradually stir in 1 cup broth and 1/2 cup milk. Cook until thick, stirring constantly. Cook onion and pepper in 1 tablespoon butter. Mix sauce, cooked vegetables, breadcrumbs, and chicken. Season to taste with salt. Place mixture into a well-greased loaf pan and bake in moderate oven 350 degree until the loaf is browned all over, about 1 to 1 1/2 hours.
