Crabmeat Augratin

INGREDIENTS

1 can- 13 ozs. evaporated milk
8 ozs. cheddar cheese, grated
1 stalk celery, chopped fine
1 cup onion, chopped fine
1 stick margarine
1/4 cup plain flour
2 egg yolks
1/4 tsp. red pepper, cayenne
1 tsp. salt
1/4 tsp. pepper
1 lb. crab meat

INSTRUCTIONS

Saute onions and celery in margarine until tender. Blend in flour; add milk gradually, stirring constantly. May need to add extra milk to make less thick. If so just add extra milk from carton. Add egg yolks, salt, red and black pepper. Cook this for five minutes. Pour sauce over crabmeat and mix. Blend well and pour into a greased casserole dish. Sprinkle the grated cheese on top. Bake 375 degrees for 10 to 15 minutes. This serves 6.
