Shrimp Creole

INGREDIENTS

2 lbs. raw shrimp, peeled & deveined
2 Tbsp. margarine
1 Tbsp. flour
1 Tbsp. bacon fat
2 onions, minced
2 small cloves garlic, crushed
1 large green pepper, minced
2 tsp. parsley, minced
1 large can peeled tomatoes
1/4 tsp. red pepper
1 tsp. salt
2 bay leaves
1/3 tsp. celery seed or 3 T. minced celery
2 tsp. Worcestershire Sauce
1/4 tsp. sugar

INSTRUCTIONS

Brown flour in bacon fat. Saute chopped vegetables in margarine. Stir until onions are slightly brown then add tomatoes. Mix browned flour and sauted vegetables. Add all the seasonings and let mixture cook slowly. Cover and cook for half an hour. Add shrimp and Worcestershire sauce, cover and cook slowly for 30 minutes more. Serve over mounds of cooked rice. This serve 6.
