Salmon Loaf

INGREDIENTS

2 c. canned salmon
3 T. fat
3T. flour
1 c. milk and salmon liquid
Salt and pepper
2 T. minced parsley
2 c. bread crumbs
1 egg, beaten

INSTRUCTIONS

Drain canned salmon, saving the liquid. Melt fat; add flour and blend. Add enough milk to salmon liquid to make 1 cup. Stir slowly into fat and flour. Cook until thickened, stirring constantly. Add seasonings Now mix the seasoned sauce with salmon, bread crumbs, and beaten egg. Form into loaf or pack into well greased loaf pan. Bake uncovered at 350 degrees about 30 minutes or until brown.
