Bean And Cheese Enchiladas

INGREDIENTS

2 pkgs. corn tortillas
6 C. pinto beans
2 onions
4 cloves garlic
1/4 C. parsley
4 C. enchilada sauce
24 sticks jack cheese
4 C. grated cheese

INSTRUCTIONS

Grind beans, onions, garlic and parsley in a food processor. Fry tortillas lightly (till limp, not stiff). Dip a tortilla in sauce. Fill with 2 tablespoons of bean mixture and a finger of cheese and roll. Set in a baking dish seam-side down. Repeat with rest, arranging to suit your baking dishes and appetites. Makes 24. Pour remaining sauce over tortillas and bake for 25 minutes at 350 degree. Top with grated cheese and bake for 5 minutes more to melt the cheese.
