Butterfly Shrimps

INGREDIENTS

1 1/2 lbs. jumbo shrimps
3 tbsp. flour
2 eggs
1/2 tsp. salt and dash of pepper

INSTRUCTIONS

Shell but leave the tail on. they are the butterfly tails. Clean and wash shrimps then split along the back, but do not cut all the way through. Wash again and dry with towel. Place eggs, salt and flour in mixing bowl, mix well until it forms a smooth batter, then put in shrimps and mix thoroughly. Take shrimps out with fork one by one and drop into deep hot oil and fry until golden brown. Serve.
