Beet Pickles

INGREDIENTS

6 lbs beets
2 lbs sugar
1 pt. vinegar
1/4 C. pickling spice

INSTRUCTIONS

Cook beets until tender, cool and slip off peeling. Tie spice in cloth. Mix sugar and vinegar, add beets and spice. Bring to a boil and cook about 5 minutes. Pack in sterilized hot jars and seal.
