Pears Spiced

INGREDIENTS

7 lbs pears
4 lbs sugar
1 pt. vinegar
2 Tbsp. stick cinnamon
2 Tbsp. whole allspice
1 Tbsp. mace
1 tsp. whole cloves

INSTRUCTIONS

Pears may be peeled, diced or ground. Make a syrup by combining the vinegar and sugar. Add fruit. Break cinnamon in pieces and tie in cheesecloth with other spices. Add to the fruit and syrup. Cook, stirring until thick. Pour into jars, seal or cover with paraffin.
