Any amount of butter

INSTRUCTIONS

Place any amount butter you wish in a deep heavy saucepan. Over very low heat let the butter melt slowly. As it melts, it will begin to simmer. Remove foam with a slotted spoon from the top. Remove the butter from the heat. Allow it to settle. All matter will settle to the bottom Slowly pour the pure clarified butter into a clean saucepan. If the clarified butter is not to be used right away, pour it into a sealed container. It will keep indefinitely in the refrigerator.

The purpose for clarifying butter is to make it pure and light. In addition, it will not burn when sauteing or frying.

Clarified butter used in pastry makes for a better pastry. Use it always for the Kourabiedes recipe.
