Giblet Gravy

INGREDIENTS

chicken giblets, washed and clean
1/4 cup oil, shortening or margarine, melted
1/4 cup plain flour
2 cups hot chicken stock or hot water, as needed
salt to taste
pepper to taste
1/2 tsp. garlic powder
1 tsp. chicken base or bouillon, mixed with a little water

INSTRUCTIONS

Cover cleaned giblets with water; bring to a boil; reduce heat; simmer 1 hour or until tender. Drain; reserve liquid for use as part of stock for chicken gravy. Chop giblets coarsely; set aside and add to gravy.

Sprinkle flour evenly over drippings and fat in bottom of pan. Blend together until smooth and cook over low heat 2 minutes. Add stock or water to roux; adding as needed and stirring constantly. Bring to a boil; reduce heat; simmer 10 minutes or until thickened, stirring constantly. Add seasonings, giblets and chicken seasoning. Add more stock or hot water to get the right consistency.
