Potato Soup

INGREDIENTS

6 large potatoes, peeled and cubed
2 carrots, grated
1 large onion, grated

MILK SAUCE:
3 cups milk
1 cup chicken stock or broth
2 T. margarine
1/2 cup flour
2 tsp salt
2 tsp pepper

TOPPING:
cheddar cheese, grated

INSTRUCTIONS

Peel and cube potatoes. Cook potatoes in salted water in a boiler until tender, then drain. Set aside.

In a saucepan add a small amount of water and simmer grated carrots and grated onions until tender. Set aside.

Melt butter over medium heat. Add flour and stir to form a paste. Add milk, chicken stock or broth, salt and pepper. Continue to cook until mixture is thick and smooth. Add potatoes and carrot-onion mixture. Season to taste. Add more milk if needed to desired consistency. Serve in a bowl and sprinkle some grated cheddar cheese on top before eating.
