INGREDIENTS
4 cups chicken stock
1 1/2 cup chicken, cooked, chopped
1 small onion, chopped
1 large bell pepper, chopped
2 carrots, sliced
2 stalks ceklery, sliced
2 tbsp. margarine
1/4 cup rice, uncooked
1/2 cup green peas, frozen
salt to taste
pepper to taste
INSTRUCTIONS
In a large saucepan, saute carrots, green peppers, celery and onions in butter until tender. Add chicken stock, cooked chicken, uncooked rice, salt and pepper. Bring to a boil; reduce to a simmer and cook for 20 minutes. Add green peas and simmer another 5 minutes. Remove from heat and serve.
