INGREDIENTS
2 tbsp. butter or margarine
1 large onion, chopped
1 small green pepper, chopped
1 large can tomatoes, whole
3/4 cup okra, cut
1/2 cup rice, uncooked
5 cups chicken stock or broth
salt to taste
pepper to taste
1/2 tsp. garlic powder
2 cups chicken, cooked, chopped
1/2 cup corn, drained
INSTRUCTIONS
In a large saucepan, saute green peppers and onions in butter until tender. Crush 1 can tomatoes and add to mixture. Add okra and rice. Pour in chicken stock and add seasonings. Mix thoroughly. Bring to a boil. Cover and simmer for 20 minutes or until rice is done. Add chopped chicken and corn. Heat thoroughly and serve hot.
