INGREDIENTS
2 each eggs
1/2 cup butter
3/4 cup raisins water
1 2/3 cups all purpose flour
1/2 cup nuts, chopped
1 cup seedless raisins
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp allspice
3/4 cup sugar
ICING
1 1/2 cups powdered sugar
1/2 cup butter
1 each egg
1 tsp vanilla
INSTRUCTIONS
Pour 1 cup of hot water on raisins and simmer 20 minutes. There should be 3/4 cup water left. Cream butter and sugar. Add beaten eggs, then flour and raisin water alternately. Add raisins, nuts, spices, and a pinch of salt. Bake in 2 layers in moderate oven about 30 minutes.
ICING: Cream butter and sugar until fluffy. Add unbeaten egg and cream again then add vanilla. Be sure cake is cold before icing..
