INGREDIENTS
1/2 cup shortening
1 1/2 cups sugar
2 ea. egg
2 oz. red food coloring
1 tsp. vanilla
2 cups all-purpose flour
1 tbsp. cocoa
1 tsp. salt
1 cup buttermilk
1 tsp. baking soda
1 tsp. vinegar
Icing:
1 c. milk
1/4 c. flour
1 c. sugar
1 c. shortening
2 tsp. vanilla
INSTRUCTIONS
Cream sugar and shortening, add food coloring, eggs, and vanilla. Add dry ingredients (sifted three times) alternately with buttermilk. Beat until smooth. Then mix vinegar and baking soda together and fold into batter. Bake thirty minutes at 350 degree.
Icing:
For the icing use 1 cup milk to which you add 1/4 cup of all-purpose flour. Cook until it thickens, then allow to cool. Cream 1 cup sugar and 1 cup shortening until fluffy. Add cold mixture and beat until fluffy. Add 2-tsp. vanilla. Garnish with coconut, if desired.
