Lemon Filling

INGREDIENTS

3/4 cup sugar
1/4 tsp salt
2-1/2 T. cornstarch
1/2 cup water
3 T. lemon juice
1/2 tsp grated lemon rind
1 T. margarine or butter
3 egg yolks

INSTRUCTIONS

Mix sugar cornstarch and salt in top of double boiler. Gradually stir in water, lemon juice, lemon rind and butter. Cook and stir over boiling water for about 5-6 minutes. Cover and cook gently about 10 minutes longer without stirring. Remove from heat and stir in slightly beaten egg yolks. Return to heat and cook about 2 minutes longer. Cool and then spread.
