INGREDIENTS
1 egg, beaten
1 cup sugar
juice of 2 lemons
grated rind of 1 lemon
INSTRUCTIONS
Combine egg, sugar, lemon juice and lemon rind in a saucepan over low heat; cook until thickened, stirring constantly. Add butter and stir until melted.
Yield: about 1 1/2 cups
