INGREDIENTS
1 cup sugar
3 tbs. cornstarch
1/4 tsp salt
3/4 cup orange juice
1/4 cup lemon juice
1/2 cup water
3 egg yolks, beaten
1 heaping tbs. grated orange rind
INSTRUCTIONS
Combine sugar, cornstarch and salt in a small saucepan; gradually stir in fruit juices and water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Slowly stir a small amount of hot mixture into egg yolks; add this to remaining hot mixture, stirring constantly. Remove from heat and stir in orange rind. Let cool. Makes 2 cups.
