INGREDIENTS
1 1/2 sups sugar
1/2 tsp cream of tartar
1/2 cup water
3 egg whites
1/2 tsp vanilla
INSTRUCTIONS
Combine sugar, cream of tartar, and water in a heavy saucepan. Cook over medium heat, stirring constantly until mixture is clear. Cook without stirring until candy thermometer reaches 240 degrees F. or until a drop forms a soft ball in cold water.
Beat egg whites until soft peaks form; continue to beat whites while slowly adding syrup mixture. Add vanilla, continue beating until stiff peaks form and is thick enough to spread.
