INGREDIENTS
1 egg white
6 ozs. powdered sugar
pinch of cream of tartar
INSTRUCTIONS
Beat up 1 egg white in a small bowl then add sugar gradually and a pinch of cream of tartar, stirring until icing is of the proper consistency.
If icing is too stiff, add a little more egg white and if not stiff enough, beat up a little more and only add more sugar if actually necessary, for by using more sugar it is apt to make the icing rather coarse and hard to pipe with.
