Cherry Cobbler

INGREDIENTS

2 (16 oz) cans red tart pitted cherries
1 1/2 cups sugar or 6 pkgs of sweet & low
1 1/3 cups all-purpose flour, divided
Butter or margarine
1 tsp. baking powder
1/4 tsp. salt
3 tbs. shortening
1/3 cup milk

INSTRUCTIONS

Drain cherries, reserving juice . Combine sugar and 1/3 cup flour in a saucepan; add cherry juice, blending until smooth. Cook over low heat until thickened, stirring constantly; add cherries & pour into a shallow 2-quart baking dish. Dot with butter.

Combine remaining 1-cup flour with baking powder & salt; cut in shortening until mixture resembles coarse meal. Stir in milk. turn pastry out onto a floured surface & knead 4 or 5 times then roll out to 1/4 inch thickness.

Place pastry on top of cherries; trim edges, if necessary. Make several slits in top to allow steam to escape. bake at 400 degrees for 20 to 30 minutes or until crust are golden brown.
