INGREDIENTS
1 3/4 cup sugar
3/4 cup shortening
4 eggs
3/4 cup buttermilk (or sweet milk w/ 1 1/2 tsp. vinegar added)
1 tsp. lemon, grated rind
1 tbsp. lemon juice
1 tsp. orange, grated rind
1 tbsp. orange juice
8 oz. dates, chopped
1 1/4 cup orange sliced candy
1 cup coconut
1 1/2 cup pecans, chopped
4 cups plain flour
1 tsp. soda
1/2 tsp. salt
GLAZE:
1 cup powdered sugar
2 or 3 tbsp. orange juice
1 tsp. orange, grated rind
INSTRUCTIONS
Combine flour, salt, soda, grated lemon and orange rind. Combine coconut, dates, orange slice candy and pecans. Sprinkle all of flour over fruits and nuts. Work so that pecans will be apart.
Cream sugar and shortening well. Add eggs and cream again. Add lemon and orange juice and milk. Stir until blended.
Add the milk mixture to flour and fruit mixture. Stir until all is moistened. Line loaf pan with wax paper on bottom. Grease paper and sides of pan.
Bake at 300 degrees for 50 minutes or until done. Makes 2 large or 3 small loaves.
When done cool in pans for about 5 minutes. Punch holes in top of loaves with fork or toothpick. Remove from pan and glaze.
NOTE: When thoroughly cool -wrap in foil and store.
