INGREDIENTS
2 Cups boiling water
3/4 Cup white cornmeal
1 1/3 Cups (15oz. can) sweetened condensed mill
Cup molasses
1 Cup cold water
1/2 teaspoon salt
1/4 Cup butter, melted
2 eggs, slightly beaten
1 Cup raisins
1 Teaspoon vanilla
1 Teaspoon cinnamon
INSTRUCTIONS
Pour boiling water into large mixing bowl. Sprinkle corn meal over surface of water. Stirring constantly until all the water is absorbed. Blend in sweetened condensed milk, molasses, cold water, salt and butter Slowly stir hot mixture into beaten eggs; add raisins, vanilla and cinnamon, mix well. Pour into buttered 2-qt. casserole Bake in a moderate oven 35O degrees about 1 1/2 hours or until knife inserted near center of pudding comes out clean. Serve warm, with cream or whipped cream, if desired.
