INGREDIENTS
4 cups potatoes, sliced
6 tbsp. flour
6 tbsp. butter or margarine
3 cups milk
salt to taste
pepper to taste
1/4 cup cheddar cheese, shredded
1/2 tsp. mustard
CRUMB MIXTURE
2 cups bread crumbs
1/4 cup butter or margarine, melted
2 tbsp. cheddar cheese
INSTRUCTIONS
Cover potatoes with salted water; bring to a boil and cook 20 minutes or until tender. Drain well. Place potatoes in a baking pan. Blend butter and flour together until smooth. Pour milk and salt in stirring constantly. Simmer 5 minutes or until thickened. Add cheese and mustard to sauce. Stir until cheese is melted. Pour mixture evenly over potatoes. Blend crumbs and butter; add cheese. Sprinkle crumb mixture over potatoes. Bake 45 minutes or until brown.
