INGREDIENTS
4 large baking potatoes
1/2 cup milk or cream
1/4 cup butter or margarine
2 eggs, slightly beaten
1/4 cup cheese, grated
1 tbsp. chives, chopped
1/2 tsp. salt
dash of black pepper
INSTRUCTIONS
Bake potatoes at 400 degrees for 1 hour or until tender. When done, cut a lengthwise slice; scoop out the potato with a spoon. Mash; add milk, butter, salt, pepper, chives and eggs. Whip until fluffy and light. Refill skins with this mixture. Sprinkle with cheese. Bake at 425 degrees for 10 minutes or until potato tops are lightly brown.
